About Our Chef

Executive Chef, William James Brunyansky brings a wealth of international expertise to The Keefer Mansion Inn.

Born in St. Catharines, this individual has made his dream of becoming a Chef and master of his domain a reality in his own backyard. His culinary skills have been honed at some of the world's most acclaimed properties including the 3 Star Michelin rated Gavroche and 2 Star Rated Le Manoir au Quat’ Saisons in the UK and the Mobil 5 Star, AAA 5 Diamond Ritz Carlton in Naples, Florida. He also apprenticed under the tutorship of Master Chef Lee Parsons
at the Prince of Wale Hotel in
Niagara-on-the-Lake.

Chef William's menus reflect his love of quality food and the traditional culinary methods. Every dish Chef William creates is a unique and artistic masterpiece, immaculate and arousing to all senses. Appetizers through dessert are built from the most perfect balance of colors, textures, scents and taste. His culinary style is reminiscent of French Contemporary infused with a regional attitude. The flavor of each plate however, is Chef William's signature. While the presentation is clean and simple, the flavors are diverse and refreshing; the way food is supposed to taste. "Niagara has such a wonderful and unique bounty of fresh produce that you don't have to cover up the taste. Simply put, my feeling is that a carrot should taste like a carrot", he jokes. "I try to bring out the natural flavors in the food".

Another unique feature of Chef William's menu is that it changes with the season. An appetizer in the winter may include a hot bowl of White Bean Cappuccino, while in the summer you may savour a Chilled Yellow Tomato Gazpacho. Entrees vary from dishes such as Beef Tenderloin with Truffled Potato and Seasonal Vegetables or Black Cod with a Fricassee of White Beans, Pearl Onions and Bacon Lardons.

The Inn's selections of sumptuous desserts serve as a grand finale to Chef William's stellar culinary performances. Guests may currently choose from a delectable selection of items such as White Chocolate Cream Brulée or a rich Peanut Butter and Dark Chocolate Pate.

The Keefer Mansion Inn is about creating a sense of history and nostalgia and yet updated to today's standards. Throughout the day, it is not uncommon to find Chef William meandering through the dining room, greeting guests at their tables to discuss his latest creation. He truly enjoys romancing the food, now but a long lost tradition.

Chef William has a son Liam and daughter Cassidy who live in Niagara.
